Peanut Butter Granola

This peanut butter granola is a great way to add a healthy crunch to a variety of foods.

Ingredients
  

  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 3 Tbsp coconut sugar
  • 1 Tbsp coconut oil
  • 1/4 tsp salt
  • 2 cups oats old fashioned

Instructions
 

  • Preheat oven to 325°.
  • Combine first 5 ingredients in a medium saucepan.
  • Melt over medium heat for 2-3 minutes, stirring constantly.
  • Remove from the heat and stir in oats, 1 cup at a time.
  • Stir until thoroughly mixed.
  • Place on a parchment lined baking sheet.
  • Bake for 20 minutes, turning over after 10 minutes.
  • Let cool on baking sheet and place in a container or jar.

Notes

Recipe yield is roughly 4 cups. Store in airtight jar or container to ensure freshness.
If possible, use a natural peanut butter or one without added sugars.
